1 large turkey breast or 3 breasts, bone in, skin removed
4-6 large stalks of celery
1/4 onion if I have
1/2 cup vegannaisse mayo
1/4 Dijon mustard
Handful of fresh dill
Handful of fresh basil or parsley
2-3 lemons
Salt and pepper to taste. Option to add chopped apple or raisins as well!

Take a large pot and fill with 8 cups of water. Submerge raw turkey breast and bring to boil. Lower to simmer for 25-35 minutes or until completely cooked through. In the meantime, wash and chop your veggies and squeeze your lemons. When turkey is cooked, let cool, and chop into cubes. Combine ingredients and enjoy.
PRO TIP! Do not discard liquid in the pot. Use that liquid as stock to make a big pot of soup by adding tons of veggies like peppers, zucchini, onion and carrot to eat later. Now you have proteins and veggies covered for the next few days!!
