Ingredients:

  • 1 whole raw chicken or bone-in turkey breast, skin removed
  • Large pot of water, about 6-8 cups (enough to cover chicken or turkey plus an inch or two)
  • Onion
  • 4 stalks celery
  • 4 carrots
  • 1 green bell pepper
  • 1 large sweet potato
  • Zucchini, parsnip, turnip (optional)
  • Large bunch of dill
  • Large bunch of parsley
  • 1 tsp Salt
  • ½ tsp black pepper
  • ¼ tsp Turmeric
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ¼ tsp Ginger powder
  • ¼ tsp Dried basil

Directions: Boil chicken or turkey in the water for an hour. Remove poultry and set aside in a bowl in the refrigerator. Chop the vegetables in 2-4 inch pieces and add to the soup. Tie up herbs using twine or cheesecloth and add to the soup along with seasonings and spices. Bring to boil and then cover and simmer for an hour or longer. Shred the poultry and add back to the soup before serving.
