Toss 1 pound Shishito peppers with 1 T olive oil and 1/8th teaspoon salt. Turn the stove top heat on and spray a skillet or wok with nonstick spray. Add the Shishito peppers to the hot pan and cover for about 5 minutes. Lift the cover and use tongs or a spatula to toss peppers around every other minute or so, to prevent burning. When peppers are slightly blistered and softened, add in 3 chopped garlic cloves and chili flakes (option). Next, add in a good splash (1-2 tablespoons) of mirin and 1 tablespoon of light soy sauce or Tamari. Toss and cook for an additional 1-2 minutes. Right before serving, sprinkle with 1 tsp. Sesame oil (optional). Enjoy! .
