What are your favorite Mothers Day dishes? I love this purple cabbage and blueberry salad by one of the best mothers I know, my sister! She’s an amazing mother of FIVE kids and rocks the #veggiesmost lifestyle. The recipe is below and it’s a total crowd pleaser and looks stunning on the table.

Olivia loves it in a fajita, I take it on a plate

Ingredients
1 bag of shredded purple cabbage, or thinly sliced head of purple cabbage
1 bag of shredded carrots, or 2 carrots shredded
1 container of blueberries
1/4 cup craisins, (I like to chop them up a bit first)
2 scallions, sliced
1/4 cup slivered almonds
1 can mandarin orange slices, drained and chopped
1/4 cup olive oil
2 tablespoons white vinegar
Squeeze of full Lemon
Salt and pepper
