Optional to add:
1/2 cup thinly sliced red onion
1/2 cup chopped scallion

Dressing
1/4 cup extra virgin olive oil
1/3 cup red wine vinegar
1 tablespoon honey or packet stevia
3 cloves of minced garlic (1/2 tsp)
1 teaspoon salt, or to taste
Freshly ground black pepper.
