Take a package of 3 raw boneless skinless chicken breast and slice in 9-12 strips. In a separate bowl whisk 2 raw eggs. In a third large bowl or plate, pour 2/3 cup of whole wheat panko or bread crumbs. Pro tip: you can place high fiber cereal in the blender and use that as your bread crumb. Option to season your bread crumbs with salt, pepper and dried herbs like parsley or an Italian seasoning blend. One at a time, dip the chicken into the egg mixture followed by the bread crumbs. Coat on all sides. Place chicken on a baking sheet lined with tin foil or parchment paper and spray with oil spray. Bake at 375 for 25 minutes or until cooked through. Enjoy with roasted veggies or whatever you’d like.
